Chocolate Sacher Cake

  • 1 cup flour, for the cake
  • 1/2 cups cocoa, for the cake
  • 2 pinches salt, for the cake
  • 6 eggs, for the cake
  • 1 cup sugar, for the cake
  • 2 teaspoons vanilla essence, for the cake
  • 1 cup peach jam
  • 150 grams bittersweet chocolate
  • 230 milliliters whipping cream
  • 25 milliliters honey
  • 65 grams butter
  • chocolate coin, for decoration

  • Preheat the oven to 180°C.
  • In a bowl, add flour, cocoa, and salt, mix until combined.
  • In a mixer, beat the eggs with the sugar and vanilla extract until they double in size.
  • Using a sifter, gradually add the dry ingredients without deflating the mixture too much, divide the batter into three pre-greased and floured cake pans. Bake for 15 to 20 min.
  • For the topping, in a small pot heat the heavy cream and add the dark chocolate, honey, and butter, mix well until combined, let cool for 10 minutes
  • Place one sponge cake and spread a little peach jam, place the other sponge on top and repeat.
  • Place the cake on a rack and pour the chocolate topping over the entire sponge. Cover completely with the help of an offset spatula. Let it dry and decorate with chocolate coins.
