Chocolate Volcano

True chocolate volcano, irresistible filling of delicious chocolate lava.

  • 200 grams bittersweet chocolate
  • 100 grams unsalted butter
  • 260 grams egg yolk, (Approximately 13 egg yolks)
  • 50 grams sugar
  • 60 grams egg white, (Approximately 2 egg whites)
  • 50 grams sugar
  • 1 package raspberries

  • Melt the butter and dark chocolate in a double boiler.
  • In a bowl, beat the egg yolks with 50 grams of sugar.
  • Mix the chocolate with the egg yolks.
  • In another bowl, whip the egg whites with the sugar to soft peaks. Once whipped, gently fold in the chocolate mixture.
  • Preheat the oven to 200 °C.
  • Butter and flour the glass molds and pour the mixture into each mold.
  • Place in the oven at 200 °C for 10 minutes.
