200 grams bittersweet chocolate
100 grams unsalted butter
260 grams egg yolk, (Approximately 13 egg yolks)
50 grams sugar
60 grams egg white, (Approximately 2 egg whites)
50 grams sugar
1 package raspberries

Melt the butter and dark chocolate in a double boiler.
In a bowl, beat the egg yolks with 50 grams of sugar.
Mix the chocolate with the egg yolks.
In another bowl, whip the egg whites with the sugar to soft peaks. Once whipped, gently fold in the chocolate mixture.
Preheat the oven to 200 °C.
Butter and flour the glass molds and pour the mixture into each mold.
Place in the oven at 200 °C for 10 minutes.
