Christmas Chocolate Cake

The Christmas cake is a delicious dessert, ideal for the holiday season. It is a vanilla cake with chocolate ganache, a delicious syrup, and topped with a frosting of powdered sugar and lemon. A simple recipe to prepare and perfect to surprise your guests.

  • 1 cup sugar
  • 1 tablespoon vanilla essence
  • 1 3/4 cups flour
  • 1/2 cups cocoa
  • 100 grams dark chocolate, (for the ganache)
  • 30 grams butter, in cubes (for the ganache)
  • 2 tablespoons whipping cream, (for the ganache)
  • 1 1/4 cups water, (for the syrup)
  • 3/4 cups sugar, (for the syrup)
  • 1 tablespoon rum, (for the syrup)
  • 190 grams cream cheese, (for the frosting)
  • 3 1/2 tablespoons icing sugar, (for the frosting)
  • 1 tablespoon lemon juice, (for the frosting)
  • 400 grams strawberries, (for assembly)
  • 500 grams raspberries, (for assembly)
  • 500 grams blackberries, (for assembly)
  • 500 grams blueberries, (for assembly)
  • 10 peppermint, (for assembly)
  • 20 grams icing sugar, (for assembly)

  • For the cake: Preheat the oven to 180°C.
  • Grease 20 cm molds and place parchment paper at the bottom.
  • Emulsify the eggs with the sugar until ribbon stage.
  • Add the vanilla.
  • Gently fold in the sifted dry ingredients.
  • Pour the mixture into equally greased molds, bake for 30 minutes at 180°C. Once baked, remove from the mold and let cool.
  • For the Ganache: Heat the cream. Chop the chocolate. Mix the cream with the chocolate and finally add the butter.
  • For the Syrup: Pour the sugar into the water and boil for 10 minutes, let cool and add the rum.
  • For the Frosting: Beat the cream cheese with powdered sugar. Add the lemon juice and mix well.
  • For Assembly: Place the first disc, poke it with a skewer, moisten it with the syrup, and then add the cream cheese frosting and red fruits.
  • Place the second disc, poke it with a skewer, moisten it, and coat with chocolate ganache.
  • Decorate with berries, mint leaves, and dust with powdered sugar.
