The Christmas cake is a delicious dessert, ideal for the holiday season. It is a vanilla cake with a chocolate ganache, a delicious syrup and covered with a glass and lemon sugar bitumen. A simple recipe to prepare and perfect to surprise your guests.

Ingredients

12 portions
  • 10 eggs
  • 1 cup sugar
  • 1 tablespoon liquid vanilla
  • 1 3/4 cups flour
  • 1/2 cups cocoa
  • 100 grams dark chocolate, (for the ganache)
  • 30 grams butter, in cubes (for the ganache)
  • 2 tablespoons whipping cream, (for the ganache)
  • 1 1/4 cups Water, (for the syrup)
  • 3/4 cups sugar, (for the syrup)
  • 1 tablespoon Rum, (for the syrup)
  • 190 grams cream cheese, (for bitumen)
  • 3 1/2 tablespoons powdered sugar, (for bitumen)
  • 1 tablespoon yellow lemon juice, (for bitumen)
  • 400 grams strawberry, (For the assembly)
  • 500 grams raspberry, (For the assembly)
  • 500 grams blackberry, (For the assembly)
  • 500 grams blueberry, (For the assembly)
  • 10 mint leaves, (For the assembly)
  • 20 grams powdered sugar, (For the assembly)

Preparation

For the cake: Preheat the oven to 180 ° C.
Grease the 20 cm molds and place waxed paper on the bottom.
Emulsify the eggs with the sugar to the point of ribbon.
Incorporate vanilla.
Add the sifted dry in enveloping form.
Empty the mixture in the molds in equal parts previously greased, bake for 30 minutes at 180 ° C. already cooked remove from the mold and let cool.
For the Ganache: Heat the cream. Chop the chocolate. Mix the cream with the chocolate and finally add the butter.
For the syrup: Empty the sugar in the water and boil for 10 minutes, let cool and add the rum.
For the bitumen: Beat the cream cheese with the icing sugar. Add the lemon juice and mix perfectly.
For the Assembly: Place the first picalo dish with a skewer stick, dip it with the syrup and then the cream cheese and red fruit bitumen.
Place the second disk with the skewer stick, dip it and bathe with chocolate ganache.
Decorate with berries, mint leaves and sprinkle with icing sugar.

PRESENTATION

Decorate with berries, mint leaves and sprinkle with sugar glass.

TIPS

Allow the cake to cool properly before placing the ganache.

Si dice una cucharada de vainilla. Y la mantequilla se usa para el ganache.
