Puff Pastry Chocolate Cake

  • 1/4 cups sugar
  • 3 tablespoons cinnamon powder
  • flour, for rolling out
  • 1 kilo puff pastry
  • 1 cup whipping cream, for the chocolate cream
  • 2 cups bittersweet chocolate, for the chocolate cream
  • cocoa, for decorating
  • raspberries, for decorating
  • icing sugar, for decorating
  • peppermint, for decorating

  • Preheat the oven to 190°C.
  • Mix the sugar with the cinnamon and set aside.
  • On a floured surface, roll out the puff pastry and cut circles with a diameter of 25 cm. Place the discs on a baking tray and prick the surface with a fork.
  • Sprinkle with sugar and cinnamon, place parchment paper on top, and place a tray over it, bake for 15 minutes. Let cool and set aside.
  • For the filling, heat the heavy cream until it comes to a boil and add the chocolate, mixing until fully combined, cool and refrigerate until completely thickened.
  • Place the previous mixture in the mixer bowl and whip until it doubles in volume. Place in a piping bag with a nozzle.
  • To assemble, cover one of the puff pastry discs with the chocolate cream and place another disc on top. Repeat until you have 3 layers.
  • Dust the surface with cocoa, decorate with raspberries, powdered sugar, and mint.
