Vanilla Cake with Wafers

The vanilla cake is a dessert with a lot of texture, delicious and with all the chocolate you love. It consists of layers of fluffy cake alternating with delicious Las Sevillanas® cajeta wafers. It is a unique dessert, perfect for when you want to surprise your family.

  • Las Sevillanas® wafers, necessary amount
  • chocolates, melted to taste
  • 1 1/4 cups flour
  • 1/4 teaspoons salt
  • 1/2 teaspoons baking powder
  • 2 eggs
  • 1 cup sugar
  • 1/4 cups water
  • 1 teaspoon vanilla essence
  • 1/2 cups butter
  • 1 1/2 teaspoons vanilla essence
  • 1/2 cups sour cream
  • 1 cup icing sugar, (for the royal icing)
  • 1 egg white, (for the royal icing)

  • Preheat the oven to 180°C.
  • Combine the flour, baking powder, and salt.
  • Beat the butter with the sugar and add the eggs, vanilla, and gradually add the dry ingredients and sour cream.
  • Grease a baking sheet with butter and flour, pour in the mixture. Bake at 180°C for 12-14 minutes.
  • Remove the baking sheet from the oven and let it cool for 20 minutes.
  • Carefully remove the parchment paper and let it cool completely.
  • Cut the cake with round cookie cutters the same size as Las Sevillanas® wafers.
  • Assembly: Place one cake layer on a cake base, spread a little melted chocolate, and place a Las Sevillanas® wafer on top.
  • Repeat this step until you have all the layers.
  • For the royal icing: in a bowl, add half of the egg white with the sugar, mix very well and incorporate the rest of the egg, stir.
  • Finally, pour the royal icing over the last layer of the cake, and with the help of a spatula, spread it across the entire surface. Place the chocolate in a piping bag and drizzle it over the cake in a spiral shape. With the help of a toothpick, pull the chocolate spiral to form the decoration.
