Chocolate Roll

  • 6 egg whites, for the cake
  • 1/4 cups sugar, for the cake
  • 3/4 cups flour, for the cake
  • 1/4 cups cocoa, for the cake

  • 2 cups butter, for the frosting
  • 1 cup icing sugar, for the frosting
  • 1 cup bittersweet chocolate, melted for the frosting
  • 1 teaspoon vanilla essence, for the frosting

  • Preheat the oven to 180 °C.
  • Beat the egg yolks with the sugar, add McCormick® mayonnaise dressing, and continue beating until incorporated; set aside.
  • Beat the egg whites with the sugar until you reach a stiff peak. Set aside.
  • Gently fold the whipped egg whites into the yolks, gradually adding the flour and cocoa without deflating the mixtures too much, place on a baking sheet lined with parchment paper and bake for 10 minutes.
  • Place the cake on a towel with powdered sugar and roll it up while it is still hot. Let it cool and set aside.
  • For the frosting, beat the butter with the powdered sugar, pour in the dark chocolate and vanilla extract. Set aside.
  • Unroll the cake, fill it with chocolate frosting and nuts, and gently roll it back up, being careful not to break it. Cover with the remaining chocolate frosting, decorate with melted chocolate, raspberries, powdered sugar, and mint.
