Classic Vanilla Cake

This vanilla cake recipe is foolproof as it works every time, and you can make different variations.

  • 2 sticks unsalted butter
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 3 egg whites
  • 2 teaspoons liquid vanilla
  • 1 cup light milk

  • Preheat the oven to 180ºC. Prepare two pans, greasing and flouring them.
  • In a bowl, mix the dry ingredients; the flour, baking soda, baking powder, and salt.
  • In a different bowl, add the butter and with an electric mixer, beat until it is smoother and a little lighter in color. Add the eggs one by one and mix. Add the vanilla.
  • Add one cup of the dry ingredient mixture and let it mix, then add half a cup of milk and let it mix. Repeat this process until you finish with both mixtures.
  • Divide the batter into two pans, filling them about 3/4 full. Bake the cakes for 30 to 35 minutes. Insert a toothpick into the cake and check that it comes out clean.
  • Let it cool for 15 minutes, run a knife around the edge of the pan and flip it out to make it easier to remove.
  • Decorate your cake with the frosting of your choice.
