Coffee Choco Flan

  • 1 cup granulated sugar, for caramel

  • 25 milliliters cow's milk, for flan
  • 190 milliliters evaporated milk, for flan
  • 195 grams condensed milk, for flan
  • 1 tablespoon vanilla essence, for flan
  • 1/3 cups instant coffee, for flan
  • 2 eggs, for cake
  • 8 tablespoons sugar, for cake
  • 1 tablespoon honey, for cake
  • 4 tablespoons vegetable oil, for cake
  • 1/2 cups flour, for cake
  • 2 tablespoons cocoa, for cake
  • 1/4 teaspoons baking powder, for cake
  • 2 cups cream cheese, for frosting
  • 3 tablespoons whipping cream, for frosting
  • 1/2 cups icing sugar, for frosting

  • Preheat the oven to 160° C.
  • For the caramel, in a small pot over low heat, cook the sugar until it forms an amber-colored caramel. Pour into a flan mold and let it set.
  • For the flan, in a bowl beat the eggs with the yolks, the milks, vanilla, and coffee until incorporated.
  • In another bowl, beat the egg with the sugar and honey, slowly add the oil in a stream, add the vanilla extract, and sift the flour, cocoa, and baking powder with a strainer.
  • Pour the cake mixture over the caramel and carefully place the flan mixture on top. Cover with aluminum foil and bake in a water bath for 1 hour and 40 minutes. Cool, unmold, and refrigerate for an hour.
  • For the frosting, beat the cream cheese with the powdered sugar and the heavy cream until soft and fluffy. Decorate the cake with the frosting and add the walnuts, chocolate chips, and wafer cookies.
