  • 2 cups flour, for the crust
  • 3/4 cups butter, for the crust
  • 2 tablespoons sugar, for the crust
  • 1 San Juan® egg, for the crust
  • 2 cups cream cheese, for the filling
  • 1 1/2 cups icing sugar, for the filling
  • 1 1/2 cups whipped cream, for the filling
  • 2 tablespoons vanilla essence, for the filling
  • 1/2 cups rainbow sprinkles, for the filling

  • In a bowl, combine the flour, butter, and sugar until you get a sandy texture. Add the Huevo San Juan® and continue mixing until you obtain a smooth dough. Refrigerate for 30 minutes.
  • Roll out the dough on a floured surface, place it in a pie dish, and put a piece of parchment paper and beans on top of the dough.Bake at 180 °C for 20 minutes. Remove the parchment paper with the beans and bake for an additional 15 minutes or until the cheesecake crust is well cooked. Let it cool.
  • Beat the cream cheese and powdered sugar until smooth. Then gently fold in the whipped cream and vanilla extract gradually. Finally, add the colorful sprinkles and mix in.
  • Place the cheese filling inside the pie crust and refrigerate for 60 minutes.
  • Decorate the cheesecake with whipped cream and colorful sprinkles.
