The Fruit Cake is a very traditional dessert during the Christmas season. It is a rich and fluffy Christmas cake with dried fruits and cherries, excellent for finishing a delicious meal or enjoying with coffee. The Oikos yogurt helps keep this cake moist and gives it a delicious flavor.
Place the butter and sugar in a bowl and beat them to cream. Once they are fluffy and change color, start adding the eggs one by one.
Incorporate the flour, baking powder, and spices. Continue beating.
Add the yogurt and oil, alternating between the oil and Oikos® Natural Yogurt.
Chop the cherries, raisins, walnuts, and almonds. Macerate them with rum. Add them gradually to the previous mixture. Continue beating and add the food coloring (little by little).
Grease a mold with butter and flour. Pour the prepared mixture and bake for 40 minutes or until the fruit cake is cooked in the center.
