Fruit Cake with Yogurt

The Fruit Cake is a very traditional dessert during the Christmas season. It is a rich and fluffy Christmas cake with dried fruits and cherries, excellent for finishing a delicious meal or enjoying with coffee. The Oikos yogurt helps keep this cake moist and gives it a delicious flavor.

  • 500 grams flour
  • 300 grams raw sugar
  • 1 teaspoon baking powder
  • 5 eggs
  • 1 Oikos® plain Greek yogurt
  • 375 grams butter
  • 1 teaspoon salt
  • 125 milliliters rum
  • 125 grams unsalted almonds, toast
  • 125 grams cherries
  • 125 grams raisins
  • 125 grams pecans
  • 1 pinch ground cloves
  • 4 tablespoons vegetable oil
  • 1 pinch nutmeg powder
  • 3 drops gel food coloring, black

  • Preheat an oven to 180° C.
  • Place the butter and sugar in a bowl and beat them to cream. Once they are fluffy and change color, start adding the eggs one by one.
  • Incorporate the flour, baking powder, and spices. Continue beating.
  • Add the yogurt and oil, alternating between the oil and Oikos® Natural Yogurt.
  • Chop the cherries, raisins, walnuts, and almonds. Macerate them with rum. Add them gradually to the previous mixture. Continue beating and add the food coloring (little by little).
  • Grease a mold with butter and flour. Pour the prepared mixture and bake for 40 minutes or until the fruit cake is cooked in the center.
