1 1/4 cups unsalted butter , (300 g) cold, for the crust
1 egg, for the crust
1 teaspoon liquid vanilla , for the crust
3/4 cups sugar , (180 g), for the crust
2 tablespoons unsalted butter
6 green apples , peeled and diced
1/4 cups raw sugar
1 teaspoon cinnamon
1/2 teaspoons cardamom
1 clove
1 egg, for brushing

Preheat the oven to 180°C.
For the crust, place everything in the food processor and process until combined. Knead lightly and let rest in the refrigerator for 10 minutes.
Roll out with a rolling pin to 5 mm thick and place in a previously greased and floured pie pan, trim the excess and set aside for the lattice. Reserve the pan in the refrigerator.
In a skillet over low heat, melt the butter and sauté the apples. Add the sugar and cook for 5 minutes or until the liquid has reduced. Add the dry ingredients and cloves and cook for 1 more minute. Let cool.
Fill the pan with the apples and cover with a lattice of the remaining dough. Brush with egg and bake for 40 to 45 minutes or until the crust is golden brown. Serve.
