Keto Chocolate Cake

The interesting thing about this easy cake recipe is that it has no sugar or carbohydrates and is designed for when you are on a Keto diet, which is high in fat. For this keto recipe, you need to use monk fruit, which is an ideal ingredient because it does not increase glucose in the bloodstream and does not cause cavities.

  • 10 eggs
  • 1 1/4 cups monk fruit
  • 1 cup coconut flour
  • 1 cup cocoa
  • 1/2 cups coconut milk
  • 1 tablespoon baking soda
  • 1 tablespoon baking powder
  • 1 cup bittersweet chocolate, melted
  • 1/2 cups coconut oil, melted

  • Preheat the oven to 170°C.
  • In a mixing bowl, beat the eggs with the monk fruit until they double in size, gradually add the coconut flour, cocoa, coconut milk, baking soda, baking powder, dark chocolate, and coconut oil. Beat until incorporated and you have a homogeneous mixture.
  • Grease a cake pan with coconut oil and sprinkle with cocoa.
  • Pour the cake mixture and bake for 35 minutes or until a toothpick inserted comes out clean. Let it cool and unmold.
  • For the frosting, heat the coconut milk in a saucepan over medium heat, add the dark chocolate and stir until completely melted. Refrigerate and set aside.
  • Beat the frosting until it doubles in size.
  • Cover the cake with the frosting, and decorate with toasted almonds, raspberries, and chocolate shavings.
  • Cut a slice and enjoy.
