Nothing better than a dessert with intense chocolate flavor, that's why we prepare this recipe for Keto Chocolate Cake. The interesting thing about this easy cake recipe is that it has no sugar or carbohydrates and is designed for when you are following a Keto diet, which is high in fat.

For this keto recipe you need to use monkfruit, or monk fruit, which is an ideal ingredient because it does not increase glucose in the bloodstream, and doesn't cause tooth decay.

Ingredients

10 portions
  • 10 eggs
  • 1 1/4 cups monk fruit
  • 1 cup Coconut flour
  • 1 cup cocoa
  • 1/2 cups coconut milk
  • 1 tablespoon baking soda
  • 1 tablespoon baking soda
  • 1 cup bitter chocolate, melted
  • 1/2 cups coconut oil, molten
  • enough coconut oil, to grease
  • enough cocoa, for the cake pan
  • 1/2 cups coconut milk
  • 1 cup bitter chocolate
  • 1 cup almond, filleted, to decorate
  • 1 cup raspberry, to decorate
  • enough chocolate, in chips, to decorate

Preparation

Preheat the oven to 170 °C. (392 °F)
In a bowl of a blender beat the eggs with the monkfruit until they double in size, add little by little the coconut flour, the cocoa, the coconut milk, the baking soda, the baking powder, the dark chocolate and the coconut oil. Beat until incorporated and obtaining an homogeneous mixture.
Grease a cake mold with coconut oil and sprinkle with cocoa.
Pour the cake mixture in the pan and bake for 35 minutes or until a toothpick comes out clean. Let cool and remove from the cake pan.
For the frosting heat the coconut milk in a saucepan over medium heat, add the bitter chocolate and stir until it is completely melted. Refrigerate and set aside.
Beat the frosting until it doubles its size.
Cover the cake with the frosting, decorate with toasted almonds, raspberries and shaved chocolate.
Cut a slice and enjoy.

PRESENTATION

Decorate with almonds and raspberries.

TIPS

Monk fruit doesn't increase glucose in the bloodstream, doesn't cause tooth decay or have adverse effects like many artificial sweeteners, therefore, it is recommended for the Keto diet.

En "medidas " viene la opción para ponerlo a gramos, pero no lo hace correctamente ya que el caso de monk fruit pone 0 gramos lo cual no es correcto. Seria de mucha utilidad poder saber las cantidades en gramos. Gracias
