Light Cheesecake

This delicious recipe has only 150 calories per serving. The typical cheesecake recipe but with natural yogurt and cottage cheese to keep it low in calories.

  • 4 cups low fat plain yogurt without sugar
  • 1/2 cups wholegrain crackers, crushed
  • 1 tablespoon butter, melted
  • 1 cup cottage cheese, low in fat
  • 3 eggs
  • 3/4 cups brown sugar
  • 2 tablespoons wheat flour
  • 1 tablespoon lime juice
  • 1 tablespoon vanilla essence
  • 1 cup fruit of the forest

  • Place the yogurt on a cloth with a deep bowl underneath. Let it strain in the refrigerator overnight to obtain thicker yogurt.
  • Preheat the oven to 160 degrees Celsius.
  • Mix the crushed cookie with the melted butter and press the cookie mixture into a springform pan.
  • In a blender, combine the cottage cheese and egg whites and blend well until incorporated.
  • Add the yogurt, sugar, flour, lemon, and vanilla. Mix until combined.
  • Pour the mixture over the cookie crust and bake for 1 hour or until well set.
  • Let it cool and serve with the berries.
