  • 4 San Juan® eggs
  • 1 1/4 cups icing sugar, sifted
  • 1/2 cups butter, melted
  • 1 tablespoon water
  • 1 cup flour
  • 1 tablespoon vanilla essence
  • 2 cups milk, warm
  • icing sugar, for decoration
  • mixed berries, for decoration

  • Crack the Huevo San Juan® eggs and separate the whites from the yolks. Set aside.
  • In a bowl, combine the Huevo San Juan® yolks and sugar and beat until the color changes to a pale yellow. Add the butter and water and beat for 2 more minutes.Add the flour and mix until there are no lumps, then pour in the milk and vanilla and continue mixing for 3 more minutes. Set aside.
  • In another bowl, place the Huevo San Juan® egg whites and beat until they double in size and are stiff.
  • Gradually add the whipped egg whites to the yolk mixture and fold gently. Pour the mixture into a square mold of 20 x 20 cm and bake at 160 °C for 60 minutes.
  • Let the magic cake cool before unmolding. Decorate with powdered sugar and berries.
