Crack the Huevo San Juan® eggs and separate the whites from the yolks. Set aside. In a bowl, combine the Huevo San Juan® yolks and sugar and beat until the color changes to a pale yellow. Add the butter and water and beat for 2 more minutes.

Add the flour and mix until there are no lumps, then pour in the milk and vanilla and continue mixing for 3 more minutes. Set aside.
