Minute Cakes

Very simple, quick, fun, and delicious, plus it saves you in a pinch and makes you look good with your guests for breakfasts or dinners.

  • 2 cups pancake mix
  • 2 tablespoons sugar
  • 1 teaspoon vanilla essence
  • 1 carrot, grated carrot
  • 1 egg
  • 2 centimeters unsalted butter
  • 1 cup cow's milk
  • 190 grams Philadelphia® cream cheese
  • jam, blackberry
  • chocolate chips

  • Mix all the ingredients for the cakes by hand or with a mixer, adding the grated carrot last, integrating it manually. NOTE: If you want to make some with chocolate chips, these should be mixed into the batter before baking. Any leftover batter can be stored in a covered container and refrigerated for up to 2 days. Great, right? This way, you have prepared batter for your minute cakes whenever you want.
  • Pour 2 to 2 ½ tablespoons of the prepared batter into each mold and bake them one by one in the microwave for one minute at the highest power of your oven.
  • Take them out of the oven with gloves and decorate with cream cheese and jam; adding jam to the chocolate chip ones is optional.
