Delicious Corn Cake in Pressure Cooker

  • 3 cups white corn kernels, 450 g
  • 1 cup condensed milk, 375 g
  • 1 cup flour, 125 g
  • 1 tablespoon baking powder, 13 g
  • 1 cup butter, at room temperature, 200 g
  • 1 cup sugar, 200 g
  • 4 eggs, at room temperature
  • 1 teaspoon vanilla essence, 5 ml
  • icing sugar, for decoration

  • Blend the corn kernels with the condensed milk and set aside.
  • Sift the flour together with the baking powder.
  • Beat the butter until creamy, then add the sugar, add the eggs one by one and the vanilla extract. Incorporate the corn mixture and the sifted powders from the previous step and beat until combined.
  • Pour the mixture into a previously floured and greased 20 cm diameter mold, then place it in a pressure cooker and cook in a water bath for 1 hour. Remove the corn cake from the pressure cooker and let it cool.
  • Unmold the corn cake from the pressure cooker, place it on a serving plate and decorate with powdered sugar.
