  • 3 San Juan® eggs
  • 3/4 cups sugar
  • 3/4 cups vegetable oil
  • 3/4 cups pumpkin jam syrup
  • 1 teaspoon vanilla essence
  • 1 1/2 cups flour, sifted
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons baking powder
  • 1 tablespoon cinnamon
  • 1 tablespoon ginger powder
  • 1 1/2 cups pumpkin purée, in syrup
  • 2 cups cream cheese
  • 1 cup whipping cream
  • 1 cup icing sugar
  • pumpkin seeds, caramelized

  • In a bowl, mix Huevo San Juan®, sugar, vegetable oil, syrup, and vanilla. Then add the flour, baking soda, baking powder, cinnamon, ginger, and pumpkin in syrup puree, and mix very well.
  • Transfer the mixture to a previously greased mold with butter and flour. Bake at 180 °C for 45 minutes.
  • For the topping: mix the cream cheese with a whisk, then add the whipping cream and powdered sugar and mix well. Keep refrigerated.
  • Cut the cake in half, fill with a bit of the topping and pumpkin seeds, and place the other cake layer on top. Decorate the pumpkin in syrup cake with the topping and pumpkin seeds.
