  • 250 grams rice flour, for the bread
  • 3/4 cups sugar, for the bread
  • 220 grams butter, for the bread
  • 150 milliliters cow's milk, for the bread
  • 5 eggs, for the bread
  • 2 tablespoons baking powder, for the bread
  • 2 milliliters vanilla essence, for the bread
  • 100 grams icing sugar, for the glaze
  • 3 lime juice, for the glaze
  • 50 grams almonds, for decoration

  • Preheat the oven to 180 degrees
  • Separate the egg whites from the yolks and cream the butter in a mixer. One by one, add the egg yolks when they are fully integrated.
  • Gradually add sugar and almond essence, ensuring that the sugar is completely dissolved. Once the mixture is well beaten, sift and incorporate the flour and baking powder alternating with the milk.
  • In a large bowl, beat the egg whites at medium speed until stiff peaks form and gently fold in the previous mixture with a spatula.
  • Grease and flour a 25 cm diameter mold, or line it with parchment paper and place the mixture in, giving the mold a few taps on a hard surface. Flatten it to settle and release air.
  • Bake for 30 minutes. Let cool and unmold.
  • Mix the lemon juice with the powdered sugar until it has a good consistency and cover the bread with the help of a spatula. Decorate to taste with almonds and serve.
