This delicious Rogel cake is better known as Alfajor cake, it is a classic in the Río de la Plata, particularly because it has a lot of dulce de leche, it is also known in Uruguay.
Place the flour in a bowl, form a well in the center and add the sugar, egg yolks, egg, water, liqueur, and butter. Mix until obtaining a very smooth dough and let it rest for 10 minutes.
Roll out the dough with a rolling pin and cut 5 circles of 15 / 17 cm in diameter (a dinner plate can be used). Prick the disks with a fork and bake for 20 minutes.
For the meringue, while the disks are baking, place the sugar in a saucepan, barely cover with water and heat until it reaches 120º C. If you do not have a thermometer, it should reach the hard ball stage. Beat the egg whites to stiff peaks before pouring the syrup in a thin stream over them. The Italian meringue is ready when we touch the bowl and it is at room temperature.
Place one disk, fill with Dulce de Leche and cover with another disk, repeat the operation with the first four disks.
Place the fifth disk and instead of adding Dulce de Leche, cover the dessert with Italian meringue and bake until it turns golden.
