Walnut Cake for Easter

A delicious walnut cake recipe for Easter. Ideal for when you hide Easter eggs all over the garden and play with your kids.

  • 1 cup pecans, chopped
  • 1 cup unsalted butter, at room temperature
  • 2 cups sugar
  • 6 eggs
  • 1 teaspoon vanilla essence
  • 1/2 teaspoons cinnamon
  • 3 cups flour
  • 1/4 teaspoons baking soda
  • 1/4 teaspoons salt
  • 1 cup sour cream
  • 1 tub vanilla frosting, for decorating
  • 1/2 cups rainbow sprinkles

  • Preheat the oven to 180ºC. Grease and flour a removable cake mold.
  • Put the butter and sugar in the mixer and beat until creamy. Add the eggs, one by one, beating well. Add the vanilla extract and the walnuts.
  • In another bowl, mix the flour, salt, and baking soda. Add half of the flour mixture to the egg mixture, then add half of the cream. Mix well on low speed. Repeat this step until all ingredients (flours and cream) are incorporated. Add the chopped walnuts.
  • Pour the mixture into the greased mold. Bake until golden, approximately 50 minutes or until a toothpick inserted comes out clean. Let it cool on a rack for 10 minutes.
  • Unmold the cake and decorate with frosting and finally add the colorful sprinkles.
