Cake with Cream and Blackberries

  • Preheat the oven to 375ºF. In a bowl, combine flour, sugar, baking powder, and stir. Add milk, butter, and vanilla and mix with an electric mixer on low speed until well incorporated.
  • Add eggs and beat for 2 more minutes. Pour the mixture into 3 equal round molds of 22 cm in diameter, previously greased with butter and floured. Bake for 20 to 25 minutes.
  • After this time, check if they are well cooked by inserting a toothpick into the cakes; it should come out dry. Place the molds on an oven rack for 10 minutes. Then, remove them from the molds and let them cool on the racks.
  • Whip the cream with the sugar until stiff peaks form.
  • Assemble the cake by placing one layer on a platter, then cover with a layer of cream and some blackberries, followed by another layer, repeat, and on the third layer, decorate with whipped cream and the remaining blackberries.
