With this recipe, you can prepare a delicious capirotada, which is a typical sweet from Puerto Vallarta. Although there are many ways to make it, this is the easiest and my favorite.
1 cup peanuts, natural (without skin, peel, and salt)
2 cups queso fresco
8 corn tortillas
2 tablespoons lard
2 cloves, whole
2 star anise pods

To make a syrup: bring the water to a boil with the piloncillo, cinnamon, cloves, and anise. Let it simmer until you have a honey-like consistency.
Slice and fry the bread on both sides with lard.
In a clay pot, place a layer of tortillas as a base, then a layer of golden bread, and add peanuts, raisins, cheese (you can also add coconut if you like), and drizzle with a bit of the syrup.
Repeat the layers until all the ingredients are used and drizzle with the syrup.
Bake in the oven at 180°C for 20 minutes, covering with aluminum foil.
