Capirotada Ring with Milk

  • 500 grams piloncillo
  • 1 liter water
  • 1 stick cinnamon
  • 2 cloves
  • 1 cup evaporated milk
  • 1 cup condensed milk
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 3 bolillo rolls
  • 1/2 cups Cotija cheese
  • 1/2 cups almonds, sliced
  • 1/2 cups raisins
  • 1/2 cups cranberries
  • 1/2 cups unsalted peanuts

  • Preheat the oven to 180°C.
  • For the piloncillo syrup, heat water with piloncillo, cinnamon, and cloves in a pot, cooking over medium heat until dissolved. Remove from heat and set aside.
  • Blend evaporated milk, condensed milk, egg, and vanilla extract. Set aside.
  • Arrange the slices of bread in a ring mold, sprinkle with cotija cheese, sliced almonds, raisins, blueberries, and unsalted peanuts until the mold is filled.
  • Bake for 25 minutes at 180°C.
  • Unmold and decorate with blueberries, sliced almonds, peanuts, and cotija cheese.
  • Drizzle with piloncillo syrup and enjoy.
