Cappuccino Soufflé

  • 3 egg whites
  • 2 egg yolks
  • 60 grams unsalted butter, a little more for the ramekins
  • 1/4 cups wheat flour
  • 3/4 cups cow's milk
  • 15 grams sugar, a little more for the ramekins
  • 30 milliliters espresso coffee
  • 2 tablespoons coffee liqueur
  • 100 grams semisweet chocolate
  • 200 milliliters whipping cream
  • 2 tablespoons icing sugar
  • 2 tablespoons cocoa

  • Preheat the oven to 200 °C.
  • Melt the butter and add the flour. Add the milk and stir until there are no lumps.
  • Add the sugar, espresso coffee, and semi-sweet chocolate. Mix well.
  • Remove from heat and add the egg yolks and coffee liqueur.
  • Whip the egg whites until stiff peaks form and gently fold them into the previous mixture.
  • Grease the soufflé molds with butter and sprinkle a little sugar on top.
  • Pour the soufflé mixture into each mold. Bake at 200 °C for 15-20 minutes.
