Caramelized Apple Puff Pastry with Cheese

  • 500 grams puff pastry
  • Domino® raw sugar, for rolling and sprinkling
  • 1 egg, for brushing
  • 1/4 cups butter, in cubes
  • 6 apples, peeled and cut into wedges
  • 1/2 teaspoons nutmeg, powdered, for the apple
  • 1 teaspoon cinnamon, powdered, for the apple
  • 1/4 cups Domino® raw sugar
  • 1/4 cups sherry
  • 3 cups mascarpone cheese, cold
  • 1/2 cups whipping cream
  • 1 tablespoon honey
  • cinnamon powder, for decoration

  • Preheat the oven to 200 °C.
  • On a flat surface, sprinkle some Azúcar Mascabado Domino®, roll out the puff pastry with a rolling pin to obtain a large rectangle approximately half a centimeter thick. On a greased and floured baking tray measuring 45 x 32 centimeters, place the rectangle of puff pastry, trim the edges to even the sides, and make vertical cuts to create smaller rectangles 12 centimeters wide. Brush the puff pastry rectangles with egg, sprinkle with Azúcar Mascabado Domino®, and bake for 25 minutes at 200 °C, or until the pastry is golden. Remove from the oven, cool, and set aside.
  • For the apple, in a large skillet, heat butter until melted, add the apple wedges, nutmeg, cinnamon, Azúcar Mascabado Domino®, and sherry; cook over low heat, stirring constantly for 15 minutes. Remove from heat, cool, and set aside.
  • In a mixer, combine the cold mascarpone cheese, whipping cream, and honey; beat for 5 minutes or until everything is creamy. Place the mixture in a piping bag with a nozzle.
  • To assemble the cake, place one layer of puff pastry on a flat surface, add the mascarpone cheese in drops, one next to the other; add the cooled apple and cover with another layer of puff pastry. Repeat the process, and when placing the third layer of puff pastry, just cover it with the mascarpone cheese and decorate with powdered cinnamon. Enjoy a 3-layer cake.
