Carrot Alpen Muesli Muffins

Everyone will love these delicious carrot muffins with Alpen® Muesli. They are not only a nutritious muffin but also very convenient for a breakfast you can take anywhere.

  • 1 1/4 cups flour
  • 1/4 teaspoons salt
  • 1 3/4 teaspoons baking powder
  • 1 1/2 cups Alpen® cereal muesli
  • 2 carrots, medium, peeled and grated
  • 1 cup brown sugar
  • 1/2 teaspoons cinnamon
  • 2 eggs
  • 3/4 cups vegetable oil

  • Preheat the oven to 180°C or 350°F.
  • Grease a 12-cup muffin pan or line it with muffin liners.
  • In a large bowl, mix the flour, salt, baking powder, cereal, grated carrots, sugar, and cinnamon. Stir well.
  • Beat the eggs and add the oil. Add the oil mixture to the carrot mixture and stir until well combined.
  • Divide the mixture among the muffin cups and bake for 12-15 minutes or until a toothpick inserted into the muffins comes out clean.
  • Let them rest for 5 minutes before removing them from the pan and enjoy when they cool down a bit.
