  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoons salt
  • 1 1/2 cups vegetable oil
  • 4 eggs
  • 3 cups carrot, grated
  • 1/2 cups walnuts, chopped
  • 3 packages cream cheese
  • 1 can condensed milk
  • 1 teaspoon vanilla essence
  • 1 envelope unflavored gelatin powder
  • 90 grams butter, for the frosting
  • 1 package cream cheese, for the frosting
  • 2 1/2 cups icing sugar, for the frosting
  • 1 teaspoon vanilla essence, for the frosting
  • 1 cup walnuts, finely chopped

  • Preheat the oven to 180°C.
  • For the carrot cake, add the dry ingredients to the mixer, and while mixing, add the eggs one by one.
  • Add the oil until combined. Add the carrots and mix for 5 more minutes.
  • Add the walnuts and mix lightly. Divide the mixture and pour into two molds, bake for 20 min. Cool.
  • For the cheesecake, in a mixer cream the cheese, vanilla, and condensed milk while mixing. Gradually add the gelatin and mix until combined.
  • On one layer of cake, place the cheesecake mixture and cover with the other layer of cake, refrigerate for 2 hours.
  • For the frosting, in a mixer add the butter, cream cheese, powdered sugar, vanilla essence, and walnuts, and beat for 5 min.
  • Decorate the cake with the frosting and chopped walnuts.
