Carrot Cupcakes

A very rich dessert made in cupcakes to enjoy in perfect portions. The recipe for carrot cupcakes with cream cheese bitumen is easy and delicious.

  • 1 cup sugar
  • 1/3 cups vegetable oil
  • 2 tablespoons orange juice
  • 1 tablespoon vanilla essence
  • 2 eggs
  • 1 tablespoon baking powder
  • 1/2 tablespoons allspice, (If you do not have mixed pepper, cloves, nutmeg and cinnamon)
  • 1/2 tablespoons salt
  • 3/4 cups flour
  • 1 1/2 cups carrot, grated
  • 1/2 cups walnuts, milled
  • 1 stick cream cheese
  • 1/2 cups icing sugar
  • 4 tablespoons orange sugar, to decorate

  • Preheat the oven to 180 degrees centigrade and prepare a tray for cupcakes with cupcake papers.
  • In a deep bowl combine the sugar, oil, juice, eggs and vanilla.
  • Mixing with a balloon type beater add flour, baking powder, allspice, salt, carrot and walnut.
  • Divide the mixture into the 12 cake molds and bake for 25 minutes.
  • With an electric mixer, mix the icing sugar with the cream cheese until there is a spongy bitumen.
  • Allow the cupcakes to cool and decorate with the cream cheese bitumen.
