1 cup sugar
1/3 cups vegetable oil
2 tablespoons orange juice
1 tablespoon vanilla essence
2 eggs
1 tablespoon baking powder
1/2 tablespoons allspice, (If you do not have mixed pepper, cloves, nutmeg and cinnamon)
1/2 tablespoons salt
3/4 cups flour
1 1/2 cups carrot, grated
1/2 cups walnuts, milled
1 stick cream cheese
1/2 cups icing sugar
4 tablespoons orange sugar, to decorate

Preheat the oven to 180 degrees centigrade and prepare a tray for cupcakes with cupcake papers.
In a deep bowl combine the sugar, oil, juice, eggs and vanilla.
Mixing with a balloon type beater add flour, baking powder, allspice, salt, carrot and walnut.
Divide the mixture into the 12 cake molds and bake for 25 minutes.
With an electric
mixer,
mix the icing sugar with the cream cheese until there is a spongy bitumen.
Allow the cupcakes to cool and decorate with the cream cheese bitumen.
