Carrot Cupcakes

A very delicious dessert made in cupcakes for perfect portion enjoyment. The recipe for carrot cupcakes with cream cheese frosting is easy and tasty.

  • 1 cup sugar
  • 1/3 cups vegetable oil
  • 2 tablespoons orange juice
  • 1 tablespoon vanilla essence
  • 2 eggs
  • 1 tablespoon baking powder
  • 1/2 tablespoons allspice, (if you don't have it, mix pepper, clove, nutmeg, and cinnamon)
  • 1/2 tablespoons salt
  • 3/4 cups flour
  • 1 1/2 cups carrot, grated
  • 1/2 cups walnuts, ground
  • 1 stick cream cheese
  • 1/2 cups icing sugar
  • 4 tablespoons orange sugar, for decoration

  • Preheat the oven to 180 degrees Celsius and prepare a cupcake tray with cupcake liners.
  • In a large bowl, combine the sugar, oil, juice, eggs, and vanilla.
  • Using a whisk, mix in the flour, baking powder, allspice, salt, carrot, and walnut.
  • Divide the mixture into the 12 cupcake molds and bake for 25 minutes.
  • With an electric mixer, blend the powdered sugar with the cream cheese until fluffy.
  • Allow the cupcakes to cool and decorate with the cream cheese frosting.
