Chai Tea Gelatin

Chai tea is a blend of different spices such as cinnamon, cloves, ginger... and black tea. It can be consumed cold or hot with or without milk or cream; this recipe is presented in the form of a chai latte.

1 cup evaporated milk
1/2 cups water, boiling
3 chai latte powder
1/2 cups water, boiling
7 grams unflavored gelatin powder
1 whipped cream, for decoration
1 teaspoon cinnamon powder

In a bowl, add the gelatin with 1/2 cup of boiling water and stir until the gelatin has completely dissolved. Set aside.
Add the chai latte powder or concentrate to a bowl and whisk until the powder has dissolved.
Heat the evaporated milk; once hot, add it to the chai latte preparation and stir for 30 seconds.
Add the gelatin to the previous mixture and whisk until incorporated.
Pour into individual molds and let cool before refrigerating until set.
At the moment of serving, decorate with whipped cream and ground cinnamon.
