Cheese and Blackberry Tamales

Canarian tamales are a classic sweet flavor in Mexican cuisine. Traditionally, lard is used in their preparation; however, butter gives a more subtle and equally delicious flavor. This recipe for blackberry cheese canarian tamales turns out spectacular and is an ideal version for breakfast or to finish a meal.

  • 200 grams butter, smooth
  • 110 grams sugar
  • 5 eggs
  • 500 grams Tres Estrellas® rice flour
  • 1 1/2 tablespoons baking powder
  • 1 tablespoon vanilla essence
  • corn husk, for tamale, soaked
  • 1 1/2 cups blackberries, fresh
  • 1 cup cream cheese, cut into cubes

  • Beat the butter and sugar in a bowl with a hand mixer for 3 minutes or until the mixture is fluffy, then add the eggs, one at a time, until fully incorporated.
  • Add the Tres Estrellas® rice flour, baking powder, and vanilla with the help of a spatula and incorporate until the ingredients are perfectly combined.
  • Place a tablespoon of dough on one of the tamale leaves and add blackberries and cheese to taste. Close the leaf and repeat the steps until the dough is finished.
  • Place the tamales in a steamer and cook for about 1 hour, until the dough easily pulls away from the leaf.
  • Serve the tamales with cream and fresh blackberries.
