Cheese Flotatina with Blackberries

The flotatina gets its name from the fact that two gelatins are made, and one of them is encapsulated inside the other, as when pouring the second gelatin, the first floats. This cheese flotatina with blackberries has classic flavors, is very creamy and delicious. Although the process takes some patience, it is quite simple.

  • 2 1/2 cups blackberries, for the blackberry gelatin
  • 1 cup sugar, for the blackberry gelatin
  • 1 teaspoon lime zest, for the blackberry gelatin
  • 1 cup water, for the blackberry gelatin
  • 4 tablespoons unflavored gelatin powder, hydrated and melted, for the blackberry gelatin
  • 4 cups cream cheese, for the cheese gelatin
  • 1 1/2 cups condensed milk, for the cheese gelatin
  • 2 cups whole milk, for the cheese gelatin
  • 4 tablespoons unflavored gelatin powder, hydrated and melted, for the cheese gelatin
  • whipped cream
  • blackberry sauce, prepare it by blending blackberry jam and a little bit of water
  • blackberries, for decoration

  • Mix the blackberries, sugar, lemon zest, and water in a pot. Place the pot over heat and boil for 5 minutes or until the blackberries soften.
  • Blend the blackberries for about 3 minutes and while it's blending, pour in the melted gelatin.
  • Immediately pour the gelatin into the mold you are going to use; it is recommended that it be suitable so you can easily unmold the gelatin.
  • Refrigerate for about an hour until the blackberry gelatin is completely set; when ready, detach it from the mold and leave it there.
  • Blend the cheese, cream, condensed milk, and whole milk. While it's blending, pour in the gelatin and make sure it's completely incorporated.
  • Immediately pour the cheese gelatin into the mold where the blackberry gelatin is, making sure to carefully lift the blackberry gelatin before pouring in the cheese gelatin. The idea is for the blackberry gelatin to be trapped.
  • Once you have filled the mold, chill the cheese flotatina with blackberries for 1 hour.
  • Unmold the flotatina, decorate with whipped cream, blackberry sauce, and fresh blackberries.
