50 grams flour
1/2 cups lime, to scrape zest
500 grams requesón
100 grams no calorie sweetener
4 tablespoons water

Preheat the oven to 180ºC and place a baking dish with a little water (approximately two fingers deep).
Separate the egg whites from the yolks. Add a little salt to the yolks and 50 grams of low-calorie sweetener.
In a mixer, pour in the remaining ingredients until the consistency is a thick cream.
Add this to the egg whites, add the lemon zest, and stir with circular movements.
Place the mixture in the baking dish and cook it in a water bath.
Wait 40-50 minutes.
