With this recipe, you can prepare a delicious Cheesecake that is low in carbohydrates; even those on a reduced-sugar diet can enjoy it.

  • 6 eggs
  • 50 grams flour
  • 1/2 cups lime, to scrape zest
  • 500 grams requesón
  • 100 grams no calorie sweetener
  • 4 tablespoons water

  • Preheat the oven to 180ºC and place a baking dish with a little water (approximately two fingers deep).
  • Separate the egg whites from the yolks. Add a little salt to the yolks and 50 grams of low-calorie sweetener.
  • In a mixer, pour in the remaining ingredients until the consistency is a thick cream.
  • Add this to the egg whites, add the lemon zest, and stir with circular movements.
  • Place the mixture in the baking dish and cook it in a water bath.
  • Wait 40-50 minutes.
