Start by making the cake base. Prepare a 22cm round springform pan with butter. In a food processor, process the cookies. Add melted butter, sugar, and salt to the processor and combine. With your hands, press the base into the springform pan and bake for 15 minutes at 180 degrees Celsius.
Now prepare the filling. In an electric mixer, beat the cream cheeses until very fluffy. Gradually add the sugar and continue mixing. Add the lemon and salt and continue mixing. Add the eggs one at a time, and continue mixing. Finally, add the sour cream and mix until you have a smooth filling.
Pour the cheesecake filling into the cake base and bake for approximately 1 hour and 45 minutes.
Remove the cake from the oven and allow it to cool completely before decorating.
Slice the strawberries into thin slices.
Finish decorating the cake by first placing a thin layer of strawberry jam, then arranging the sliced strawberries all over the cake.
