Mix the cookie and coconut oil in a bowl, then place the mixture in a round baking pan. Refrigerate for 1 hour.
Blend the egg, cream cheese, Oikos® Monk Fruit Greek Yogurt, cornstarch, lemon juice, monk fruit, vanilla extract, and milk for 5 minutes until you have a homogeneous mixture.
Pour the mixture into the pan, cover with aluminum foil, and bake at 170 °C for 45 minutes.
