Cherry Dessert

  • 3/4 cups sugar, divided amount
  • 3 tablespoons tapioca, MINUTE Tapioca
  • 3/4 cups sparkling water
  • 1 tablespoon lemon juice
  • 4 cups cherries, sweet dark cherries, pitted
  • 1 cup gluten free flour mix, all-purpose baking mix
  • 1/4 teaspoons cinnamon powder
  • 1/3 cups low-fat milk
  • 1/4 cups almonds, PLANTERS Sliced Almonds

  • Preheat the oven to 375F.
  • Reserve 2 tablespoons of sugar for later use.
  • Mix the remaining sugar and tapioca in a large saucepan.
  • Stir in the water and lemon juice.
  • Let it boil.
  • Add the cherries; cook this for 2 minutes, stirring frequently.
  • Pour the mixture into a lightly greased 8 or 9-inch square baking dish.
  • Combine the baking mix, reserved sugar, and cinnamon in a medium bowl.
  • Add the milk; stir until a soft dough forms.
  • Drop heaping spoonfuls of this over the hot fruit mixture.
  • Top it with the nuts.
  • Bake the dessert for 28 to 30 minutes or until the topping is golden brown.
  • Let it cool slightly.
