Chocolate and Cappuccino Muffins

These Chocolate and Cappuccino Muffins are the perfect fusion of these two flavors; they are the bread version of a delicious Mocha, and they also contain nuts and chips for an exceptional taste.

  • 1 1/2 cups flour
  • 3/4 cups sugar
  • 3/4 cups chocolate chips
  • 1/2 cups walnuts, chopped
  • 1 tablespoon baking powder
  • 1/2 tablespoons cinnamon powder
  • 1/4 tablespoons salt
  • 3/4 cups cow's milk
  • 1/3 cups ground coffee
  • 1/4 cups butter, melted
  • 1 egg

  • Preheat the oven to 180 degrees Celsius. Prepare a baking tray for muffins with muffin liners (6).
  • In a large bowl, mix the flour, sugar, chocolate chips, nuts, baking powder, and salt.
  • In another bowl, mix the milk and the coffee until dissolved. Add the egg and the butter, and mix well.
  • Pour the coffee mixture over the flour mixture and stir. Pour into muffin liners and sprinkle a bit of chocolate chips over the mixture.
  • Bake for 25 minutes or until a toothpick inserted comes out clean. Remove from the oven and allow to cool for 5 minutes before serving.
