150 grams semisweet chocolate, in tablets
6 eggs, separated at room temperature
1 cup sugar
1 tablespoon vanilla essence
1 tablespoon aged rum
150 grams butter
1/4 cups flour
1/4 cups unsweetened cocoa powder, sugar-free
1/2 tablespoons salt
icing sugar
6 teaspoons instant coffee

Preheat the oven to 180 degrees Celsius and grease a round baking dish with cooking spray.
In a double boiler, melt the chocolate tablets while stirring constantly.
In a deep bowl, beat the egg yolks and sugar with an electric mixer for 4 minutes. Add the vanilla and rum and beat for 1 additional minute.
Slowly beating, add the melted chocolate and butter, and beat until you achieve a smooth batter.
Add the flour, cocoa, diluted coffee in a little hot water, and salt to the mixture, mixing with a wooden spoon.
In another deep bowl, whip the egg whites until stiff peaks form. Gradually add them to the chocolate mixture, mixing well to finish the cake batter.
Pour the mixture into the baking dish and bake the cake for approximately 1 hour and 20 minutes.
Remove from the oven and let cool. Before serving, decorate with powdered sugar.
