Chocolate and Coffee Cake

  • 150 grams semisweet chocolate, in tablets
  • 6 eggs, separated at room temperature
  • 1 cup sugar
  • 1 tablespoon vanilla essence
  • 1 tablespoon aged rum
  • 150 grams butter
  • 1/4 cups flour
  • 1/4 cups unsweetened cocoa powder, sugar-free
  • 1/2 tablespoons salt
  • icing sugar
  • 6 teaspoons instant coffee

  • Preheat the oven to 180 degrees Celsius and grease a round baking dish with cooking spray.
  • In a double boiler, melt the chocolate tablets while stirring constantly.
  • In a deep bowl, beat the egg yolks and sugar with an electric mixer for 4 minutes. Add the vanilla and rum and beat for 1 additional minute.
  • Slowly beating, add the melted chocolate and butter, and beat until you achieve a smooth batter.
  • Add the flour, cocoa, diluted coffee in a little hot water, and salt to the mixture, mixing with a wooden spoon.
  • In another deep bowl, whip the egg whites until stiff peaks form. Gradually add them to the chocolate mixture, mixing well to finish the cake batter.
  • Pour the mixture into the baking dish and bake the cake for approximately 1 hour and 20 minutes.
  • Remove from the oven and let cool. Before serving, decorate with powdered sugar.
