Chocolate and Coffee Pudding

This delicious pudding is rich thanks to the chocolate and coffee, but it is also nutritious since it is made with soy milk. A very tasty and light dessert.

1/2 cups brown sugar
1/4 cups cornstarch
3 tablespoons cocoa powder
1 tablespoon instant coffee
1/4 teaspoons salt
2 cups soy milk
55 grams semisweet chocolate, in pieces
1 tablespoon vanilla essence
whipped creams, for decoration
chocolates, shaved for decoration

Mix the first 5 ingredients in a medium saucepan over medium heat. Whisk well as it heats up.
Add the milk and allow the mixture to come to a boil. Lower to a simmer and cook for 1 minute or until it begins to thicken.
Remove the pudding from the heat and add the chocolate, mixing until it has melted. Add the vanilla and mix well.
Pour the pudding into 4 individual cups or flan molds, cover, and refrigerate for at least 4 hours before serving.
