Chocolate and Coffee Pudding

This delicious pudding is rich thanks to the chocolate and coffee, but it is also nutritious since it is made with soy milk. A very tasty and light dessert.

  • 1/2 cups brown sugar
  • 1/4 cups cornstarch
  • 3 tablespoons cocoa powder
  • 1 tablespoon instant coffee
  • 1/4 teaspoons salt
  • 2 cups soy milk
  • 55 grams semisweet chocolate, in pieces
  • 1 tablespoon vanilla essence
  • whipped creams, for decoration
  • chocolates, shaved for decoration

  • Mix the first 5 ingredients in a medium saucepan over medium heat. Whisk well as it heats up.
  • Add the milk and allow the mixture to come to a boil. Lower to a simmer and cook for 1 minute or until it begins to thicken.
  • Remove the pudding from the heat and add the chocolate, mixing until it has melted. Add the vanilla and mix well.
  • Pour the pudding into 4 individual cups or flan molds, cover, and refrigerate for at least 4 hours before serving.
