Chocolate, Banana, and Walnut Cake

The banana cake mixture with a touch of chocolate turns out spectacular.

  • 1/2 cups toasted pecans, chopped
  • 1 3/4 cups flour
  • 1/4 cups cocoa powder
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoons baking soda
  • 1/4 teaspoons salt
  • 1/2 cups chocolate chips
  • 2 eggs, beaten
  • 1/2 cups unsalted butter, melted and at room temperature
  • 1 1/2 cups banana, very ripe, mashed
  • 1 teaspoon vanilla essence

  • Preheat the oven to 180 degrees and place the oven rack in the center.
  • Grease a loaf pan (23 x 13 x 8 cm) with butter. Dust with flour.
  • Place the walnuts on a baking sheet and bake for 8-10 minutes until lightly toasted. Let cool and chop.
  • In a large bowl, mix the flour, baking powder, cocoa, sugar, baking soda, and salt.
  • In a medium bowl, mix the mashed bananas, melted butter, eggs, and vanilla.
  • With a spatula, gradually mix the dry ingredients (flour, etc.) with the banana mixture.
  • The mixture should remain lumpy (do not over-mix).
  • Pour the mixture into the pan and bake until the cake is slightly golden, about 55-65 minutes.
  • Remove from the oven and let cool on a rack.
