Chocolate Bar with Caramelized Almonds

  • 1 cup sugar
  • 250 grams unsalted almonds, chopped into coarse pieces
  • 500 grams semisweet chocolate

  • Prepare a baking sheet with aluminum foil.
  • In a small pot, place the sugar and add 1/4 cup of water, mix lightly. Cover the pot and heat on high until it starts to boil and turns into a golden caramel (about 5 minutes). Remove the lid and stir occasionally, cooking for 3 more minutes. Add half of the almonds and mix. Pour the mixture onto the baking sheet with aluminum foil and flatten it until it is only 1/2 cm thick. Let it cool.
  • Prepare two more baking sheets with aluminum foil.
  • In a double boiler, melt the dark chocolate.
  • Break the caramel with almonds and add to the dark chocolate, mix well.
  • Pour the chocolate with almonds onto the baking sheets and make sure to fully cover the almonds. Refrigerate the chocolate for 30 minutes or until hard. Remove the bar from the aluminum foil and cut into squares. Refrigerate and take out just before serving.
