Preparation
Prepare a tray with aluminum foil.
In a small saucepan place the sugar and add 1/4 of water, mix lightly. Cover the pot and heat over high heat until it starts to boil and make a golden caramel (about 5 minutes). Remove the lid and mix occasionally and cook for 3 more minutes. Add half of the almonds and mix. Pour the mixture into the tray with aluminum foil and flatten until it is only 1/2 cm wide. Let it cool.
Prepare two more trays with aluminum foil.
In a saucepan in a bain-marie melts the bitter chocolate.
Break the caramel with almond and add to the bitter chocolate, mix well.
Pour the chocolate with almonds in the trays and make sure to cover the almonds completely. Refrigerate the chocolate for 30 minutes or until it is hard. Remove the aluminum bar and cut into squares. Refrigerate and remove just before serving.
