Chocolate Cake

  • 50 grams unsalted butter
  • 2 cups chocolate cookies, crushed
  • 2 eggs
  • 2 cups whipping cream, refrigerated
  • 4 eggs, separated
  • 700 grams chocolate cookies, with sugar

  • To make the base, mix the cookie crumbs well with the butter and cover the bottom of a cake pan with this mixture. Place the pan in the refrigerator until you are ready to use it.
  • To prepare the filling, melt the chocolate in a double boiler and let it cool.
  • Add the two whole eggs and mix well.
  • Whip the cream in the mixer until soft peaks form and add the four egg yolks.
  • In another clean bowl, beat the four egg whites until stiff peaks form.
  • Gently fold the whipped cream into the chocolate mixture and then transfer this mixture to the bowl with the stiff egg whites.
  • Gently incorporate everything using a rubber spatula. Pour the mixture over the base and refrigerate until firm, for 6 to 8 hours.
