Ingredients

12 portions
  • 50 grams unsalted butter
  • 2 cups chocolate cookie, crushed
  • 2 eggs
  • 2 cups whipping cream, refigerated
  • 4 eggs, separated
  • 700 grams chocolate cookie, with sugar

Preparation

To make the base, mix the biscuit pieces well with the butter and cover with this mixture the bottom of a cake pan. Put the mold in the fridge until you use it.
To prepare the filling, melt the chocolate in a bain-marie and let it cool.
Add the two whole eggs and mix well.
Beat the cream in the blender until it forms smooth pinches and add the four egg yolks.
In another clean container, beat the four egg whites until stiff.
Gently blend the whipped cream into the chocolate mixture and then bring this mixture to the container where the whites are on the verge of snow.
Adhere everything with smooth movements using the rubber spatula. Pour the mixture on the base and refrigerate until firm, for 6 or 8 hours.

PRESENTATION

You can decorate with grated chocolate or chocolate strips

TIPS

The ideal is to leave it in refigeracion all day so that it takes more consistency.
