Sift the flour, baking powder, and salt well. Beat the butter and sugar in a large bowl with an electric mixer until the mixture is light and fluffy. Incorporate the eggs and vanilla extract. Gradually mix in the dry ingredients. Add the previously melted chocolate, continue mixing. Divide the dough in half, cover each half with plastic wrap. Refrigerate for at least 2 hours.
Roll out half of the dough on a floured surface; you should get at least 1 cm thickness. Use cookie cutters to shape the cookies. Roll out the dough as many times as necessary and reshape the figures. Place the cookies on a baking sheet lined with parchment paper, keeping them spaced apart so they don’t stick together. Do the same with the remaining dough.
You should bake for 10 to 12 minutes or until the cookie feels firm. Let cool on a baking sheet. Decorate with gel food coloring or fondant.
