Mix the cookies well with the butter. Line a pie mold with aluminum foil and cover with the previous mixture, and around the mold place the filled cookies. Refrigerate for 15 minutes and set aside.
Whip the cream until peaks form. Mix in the Carlos V chocolate. Heat in the microwave in 30-second intervals, stirring each time, until the chocolate is melted.
Let it cool and gently fold in the whipped cream, add the previously hydrated and dissolved gelatin, and incorporate it perfectly. Pour into the mold with the cookie base and refrigerate for one hour or until firm.
