Chocolate Pavlova

The pavlova is an Australian dessert named after the dancer Anna Pavlova. This delight is made with French meringue, making it very crispy on the outside but soft on the inside. This time, we prepared an irresistible chocolate pavlova sweetened with Domino® Muscovado Sugar, the ingredient that gives it a unique touch thanks to its caramel flavor and aroma.

  • 3 tablespoons cocoa powder
  • 1 tablespoon cornstarch
  • 3 egg whites
  • 1 teaspoon lime juice
  • 1 cup Domino® raw sugar
  • 1/2 cups semisweet chocolate, finely chopped
  • 1/2 cups mascarpone cheese, in cubes
  • 1 1/2 cups whipping cream, cold
  • 1/4 cups Domino® raw sugar
  • mixed berries, strawberry, raspberry, and blueberry; for serving
  • chamomile flower, for decoration

  • Mix the cocoa powder and cornstarch. Set aside.
  • Use a stand mixer with a whisk attachment to beat the egg whites and lemon juice on medium speed for 2 minutes. When they begin to double in size, gradually add the Domino® Muscovado Sugar while continuing to beat. Then, increase the mixer speed and keep it on until the egg whites quadruple in size and a firm meringue forms.
  • Place the meringue in a bowl, sift the cocoa powder mixture over it, add the semi-sweet chocolate pieces, and gently fold in the ingredients using a silicone spatula. Do not overwork the meringue to avoid deflating it.
  • Place the mixture on a baking sheet lined with parchment paper, spreading it with a silicone spatula to create small circles for a wavy shape with a diameter of approximately 20 centimeters. Bake the chocolate pavlova at 160 °C for 1 hour and 10 minutes, without opening the oven.
  • Once the time is up, slightly open the oven, turn it off, and let the chocolate pavlova cool inside until completely cold.
  • While the pavlova cools, beat the mascarpone cheese, heavy cream, and Domino® Muscovado Sugar with an electric whisk for 5 minutes.
  • Fill the chocolate pavlova with the cheese mixture and decorate with red fruits and chamomile flowers. Serve immediately!
