Separate the eggs and beat the egg whites until stiff peaks form.
Mix the yolks, sugar, vanilla, and chocolate. Then add the mixture to the egg whites with a folding motion.
Grease a medium baking tray with vegetable spray, place a piece of wax paper, and grease it again with vegetable spray. Pour the mixture onto the wax paper.
Bake at 180°C for 15-20 minutes, or until firm.
Once baked, remove from the oven and flip it onto a damp cloth. Carefully peel off the wax paper without breaking the cake and immediately roll it up to take the shape of a roll. Let it cool.
When the cake is cool, unroll it and spread it with whipped cream or vanilla ice cream or cajeta, and roll it up again using the cloth as a guide. It is ready to serve!
